Bring water to a boil and add chopped and peeled sweet potatoes. Once potatoes are soft, drain and let rest for 5 min. After that add all ingredients and let rest for another 5 min!
Once rested, add a small (bite sized amount of the potato mixture and roll in panko crumbs (or breadcrumbs/flour). Once oil is warm enough start adding the little balls!
When balls become crispy on outside, remove from oil and let sit on a paper towel to rest and cool!
Check to see if the maakouda is also cooked in the middle! If so, serve with a sweet and sour sauce or a yogurt sauce!
