"I made these after a friend told me how much she loved Trader Joe’s lemon cookies. I had already created the base butter wafer and then added lemon extract for a melt in your mouth treat. You can serve them plain or dip them into a flavored icing (I prefer almond extract) that hardens."

Ingredients

baking soda
tsp
baking powder
cup
butter
cup
margarine
cups
sugar
egg
tsp
lemon extract

    Preheat oven to 375°F

  • Step 2/12

    • cups flour
    • tsp baking soda
    • tsp baking powder

    In a medium bowl, mix flour, baking soda and baking powder, then set aside

    • cup butter
    • cups sugar

    In a separate bowl, beat together butter and sugar with an electric mixer

  • Step 4/12

    • cup margarine

    Add margarine and beat until creamy

  • Step 5/12

    • egg
    • tsp vanilla extract
    • tsp lemon extract

    Beat in egg and vanilla & lemon extracts

    Slowly beat in the flour mixture

  • Step 7/12

    • pinch ground cinnamon

    Add a pinch of cinnamon and fold in

    • Measuring spoon

    Using a teaspoon measuring spoon, create dough balls

    Place dough balls onto nonstick cookie sheet

  • Step 10/12

    Bake in oven for 7 minutes

  • Step 11/12

    Let cool for 2 minutes before transferring to a cooling rack

  • Step 12/12

    Optional: Dip into almond flavored icing. Allow it to harden overnight.
