"This is a Kerala version of a dry chicken curry bursting with flavors. It is prepared with fresh curry leaves, left to marinade briefly with fried onion, crushed ginger, garlic, tomatoes and spices, and pan fried for about 20min. Enjoy with rice or roti."

  • Step 1/4

    Skin the chicken and cut to pieces.

    Slice onions and fry in coconut oil until golden brown. Remove from oil with a slotted spoon and place the fried onion on top of the chicken. Peel and mash ginger and garlic with a pestle. Place on top of chicken.

    Dice tomato and add to chicken. Add all spices: cayenne pepper, coriander powder, black pepper, garam masala, curry powder, salt and curry leaves. Mix all ingredients with the chicken and set aside.

    Dice tomato and add to chicken. Add all spices: cayenne pepper, coriander powder, black pepper, garam masala, curry powder, salt and curry leaves. Mix all ingredients with the chicken and set aside.

    Heat up oil in the pan and add chicken to fry. Fry for 20-25min on medium heat until chicken is done.
