Kanelbullar : Swedish cinnamon rolls
- 2¾ g fresh yeast
- 8 ml milk
Crumble the yeast in a bowl and add some milk on it.
- 9⅝ g butter
- 16 ml milk
Melt the butter and pour the remaining milk on it.
- 60 g flour
- 8 g sugar
- ⅛ egg
- ⅛ tsp salt
- ⅛ tbsp ground cardamom
Add everything together and add the flour, 100g sugar, one egg, salt and ground cardamom. Knead the dough during 10min in a kneading machine.
Let the dough rest covered during 30min.
- 8 g butter
Roll out the dough 3mm thick and 30cm large. Spread the butter on it.
- ⅛ tbsp ground cinnamon
- 4 g sugar
Mix the sugar and the ground cinnamon and sprinkle it over the dough.
Roll the dough and cut it in +- 25 pieces. Let it rise under a towel for about 30min.

- rock sugar
- ⅛ egg
Beat the egg with water, carefully brush the rolls with it and sprinkle with pearl sugar.
Bake in a hot oven at 220°C for about 10-15min.
