Jackfruit Sushi Bowl

Step 1/7
- 180 g sushi rice
- 1 tsp mirin
- 1 tsp white wine vinegar
- 1 tsp caster sugar

Cook sushi rice according to package instructions. In a separate bowl mix together mirin, white wine vinegar and caster sugar. Once rice is cooked fold the mixture in and let cool.

- ½ red onion
- 1 tbsp sesame oil

Heat sesame oil in a pan and add onion. Fry until crispy.
Step 3/7
- 400 g canned jackfruits
- 140 g edamame beans (frozen)
- 4 tbsp teriyaki sauce

Add edamame beans to the separate frying pan. Drain jackfruit then add it to the beans. Fry both ingredients together until they’re cooked. Add teriyaki sauce, season with salt and pepper and cook for next 2-4min

Place cooled rice in a bowl. Then add the jackfruit mixture on one side.
Step 5/7
- 1 avocado
Cut avocado into stripes. Then add it to the bowl on the other side.

- 1 dried seaweed sheet
Cut seaweed into stripes and add it on top.
Step 7/7
