Kale is a dark, leafy green whose texture can be rough on the palate if not prepared properly. However, in a few simple steps, it’s easy to soften the hearty greens for use in a nutritious and satisfying salad. Simply coat the leaves in some lemon juice and olive oil, and massage them into the leaves for a few minutes. The acid and oil will help to break down the fibrous, tough-to-chew leaves into more supple and appetizing greens. Please note that all measurements are approximate; this technique is so easy, you’d do fine to eyeball the amounts.
