    Preheat oven to 200°C/400°F. Peel and mince garlic cloves. Heat a little vegetable oil in a frying pan, add the minced meat and cook for approx. 2 – 3 min., then add garlic and continue frying. Add cumin, paprika, and some salt and pepper to taste. Set aside.

    Drain kidney beans and add to a measuring cup. Add vegetable oil and smoked paprika. Season with salt and pepper and use an immersion blender to blend into a smooth puree. In a small bowl, combine crème fraiche with tomato paste, tabasco, and season with salt and pepper. Set aside.

    Core and cube bell peppers. Peel onion and dice. Pluck the leaves from most of the cilantro and chop finely. In a small bowl, mix bell pepper, onion, and cilantro and add lime juice. Season with salt and pepper.

Transfer to the preheated oven and bake everything for approx. 15 min., or until the cheese crust is golden brown. Sprinkle with scallion and chopped cilantro. Serve hot with more Doritos for dipping. Enjoy!
