    Peel boiled potatoes, mash them, and season with salt, pepper, and nutmeg. Add egg yolks to the potato mixture and combine well. Gradually work in the flour and knead the mixture on a work surface until a smooth dough forms. Divide the dough into three parts and roll each into a long rope.

    Peel boiled potatoes, mash them, and season with salt, pepper, and nutmeg. Add egg yolks to the potato mixture and combine well. Gradually work in the flour and knead the mixture on a work surface until a smooth dough forms. Divide the dough into three parts and roll each into a long rope.

    Cut the dough ropes into bite-sized pieces using a knife. Gently roll each piece over the tines of a fork, pressing lightly to create the classic gnocchi ridges. Drop the shaped gnocchi into boiling salted water and cook until they float to the surface, for approx. 2–3 min. Remove them with a slotted spoon and, if desired, toss them in a pan with butter, salt, and pepper over medium to high heat before serving.
