Preheat the oven to 180°C.

- ⅓ egg whites
- ⅛ pinch salt
- whisk
Beat the egg whites together with the salt until they begin to form peaks.
Step 3/6
- 16⅔ g caster sugar
Add in the sugar bit by bit, whisking the whole time until you have a meringue-like mixture.
Step 4/6
- 8⅓ g chopped chocolate
Fold in the chocolate, being careful not to knock out any of the air.
Step 5/6
Carefully spoon 12 cookie-sized dollops onto the baking trays. Turn off the oven, and put the trays in.
Step 6/6
Leave overnight in the oven as it cools, and enjoy the next morning!
