"This pasta is inspired by the beloved fig pasta from Berlin restaurant 'Mädchenitaliener,' bringing the dish's distinctive sweet-and-savory contrast to an easy-to-make version for home. The combination of ripe, caramelized figs, aromatic rosemary, toasted pine nuts, and savory Parmesan makes this pasta a truly special late summer dish for me. The key to the sauce is the interplay of the released fig juice, balsamic vinegar, honey, and a hint of coarse-grained mustard, creating a balanced harmony of sweetness, acidity, and savory depth. The fresh figs served on top provide an additional fruity note and a beautiful contrast to the warm sauce. For those who prefer a heartier dish, you can serve the pasta with thinly sliced, fried fennel salami."

    Cook pasta in large pot of salted water according to package instructions until al dente. Reserve some pasta water before draining. Meanwhile, cut ¾ of figs into quarters and slice remaining figs for topping and set aside. Finely chop garlic.
    • 250 g tagliatelle

    Cook pasta in large pot of salted water according to package instructions until al dente. Reserve some pasta water before draining. Meanwhile, cut ¾ of figs into quarters and slice remaining figs for topping and set aside. Finely chop garlic.

    Toast pine nuts in large pan without fat until golden brown, then remove. Heat olive oil in same pan. Add half of rosemary and let it infuse oil until fragrant, then remove. Add garlic and sauté briefly over medium heat, but do not let it brown.
