Ingredients

Servings:-8+
400 g red lentils
onion
110 g bulgur
3 cloves garlic
1 tbsp tomato purée
2 tbsp lemon juice
salt
pepper
3 tbsp butter
2 tbsp dried mint
1900 ml water
  • Step 1/12

    Finely chop the onion

  • Step 2/12

    Mince the garlic

  • Step 3/12

    Juice 1 lemon

  • Step 4/12

    • 400 g red lentils
    • onion
    • 1900 ml water

    Place the lentils, onion and water in a large pot and bring to the boil

  • Step 5/12

    Reduce the heat and skim off any scum or foam with a slotted spoon

  • Step 6/12

    • 110 g bulgur

    Add the bulgur, partially cover and cook until done according to the packet instructions

    • 3 cloves garlic
    • 1 tbsp tomato purée

    Add the garlic and tomato purée, mixing well

  • Step 8/12

    • 2 tbsp lemon juice
    • salt
    • pepper

    Add the lemon juice, salt and pepper to taste

  • Step 9/12

    Place soup in a large serving bowl

  • Step 10/12

    • 3 tbsp butter

    In a small skillet, melt the butter until it sizzles

  • Step 11/12

    • 2 tbsp dried mint

    Remove from the heat and stir in the mint

  • Step 12/12

    Pour over the soup and serve
