    Low heat a nonstick pan and add two tablespoons of olive oil. Coat completely. On a separate bowl beat eggs, add sliced onion, garlic, salt and pepper and mix.

    • 10 red, green and yellow cherry tomatoes

    Pour mixture into the pan and close the lid. Slice cherry tomatoes and place slices decoratively on top of the omelette. Close and increase heat to medium-high, allowing the base to develop a crust. Remove from heat.

  • Step 3/3

    Sprinkle chopped herbs and crumbles of blue cheese and serve in pie slices.
