Heat large skillet over medium high heat
Add onion, garlic, and peppers, allow to cook 6-7 minutes
Add spices, then cook for 2-3 minutes, stirring often
Add beans, vegetable broth, and corn. Combine and cook 5-6 minutes, stirring often
Add rice and spinach. Cook until heated through and beginning to brown.
Top with lime juice, salt, and pepper
Serve with avocado, tortilla chips, salsa, or use in tacos, burritos, and salads.
