Drunken Pork Carnitas

“This is my absolute favorite way to make CRISPY pork carnitas! Please see below for a couple recipe notes. 1) The onions I use are pre-minced dry onion pieces. I use McCormick, but any brand will work. 2) The mandarin oranges I use are two small lunchbox-sized plastic containers. Enjoy!”

Ingredients

Servings:-8+
2½ lbs pork tenderloin
2 tsp salt
½ tsp pepper
2 tsp ground cumin
2 tsp oregano
4 tbsp onions
5 cloves garlic
3 tbsp lime juice
2 packages orange slices
¾ cup beer
bay leaves

Utensils

  • Step 1/7

    • 2 tsp salt
    • ½ tsp pepper
    • 2 tsp ground cumin
    • 2 tsp oregano
    • 4 tbsp onions

    Mix the dry rub together in a small bowl. Rub thoroughly over all sides of the pork.

  • Step 2/7

    • 5 cloves garlic

    Add minced garlic to the top of the pork and place in a slow cooker.

  • Step 3/7

    • 2 packages orange slices
    • 3 tbsp lime juice
    • ¾ cup beer

    Drizzle the lime juice over the pork. Add the two containers of mandarin oranges and their juice in a circle around the pork. Add the beer to the circle of orange mixture.

    Place bay leaves on top of the pork and cook on low for 8 hours.

    Remove bay leaves. Shred pork with two forks.

    Set oven to broil on high. Add shredded pork to a rimmed baking sheet and drizzle the juices from the slow cooker on top. Broil for 5 minutes.

    Serve in warm tortillas or add on top of your favorite nacho recipe!
