"This is my absolute favorite way to make CRISPY pork carnitas! Please see below for a couple recipe notes. 1) The onions I use are pre-minced dry onion pieces. I use McCormick, but any brand will work. 2) The mandarin oranges I use are two small lunchbox-sized plastic containers. Enjoy!"

Ingredients

⅝ lbs
pork tenderloin
½ tsp
salt
⅛ tsp
pepper
½ tsp
ground cumin
½ tsp
oregano
1 tbsp
onions
1Âź cloves
garlic
ž tbsp
lime juice
½ packages
orange slices
Âź cup
beer
½
bay leaves

Utensils

slow cooker, fork, baking sheet

    • ½ tsp salt
    • ⅛ tsp pepper
    • ½ tsp ground cumin
    • ½ tsp oregano
    • 1 tbsp onions

    Mix the dry rub together in a small bowl. Rub thoroughly over all sides of the pork.

  • Step 2/7

    • 1Âź cloves garlic

    Add minced garlic to the top of the pork and place in a slow cooker.

  • Step 3/7

    • ½ packages orange slices
    • ž tbsp lime juice
    • Âź cup beer

    Drizzle the lime juice over the pork. Add the two containers of mandarin oranges and their juice in a circle around the pork. Add the beer to the circle of orange mixture.

    • ½ bay leaves

    Place bay leaves on top of the pork and cook on low for 8 hours.

    Remove bay leaves. Shred pork with two forks.

    Set oven to broil on high. Add shredded pork to a rimmed baking sheet and drizzle the juices from the slow cooker on top. Broil for 5 minutes.

    Serve in warm tortillas or add on top of your favorite nacho recipe!
