Preheat the oven to 180°C and prepare a baking tray with parchment
- 2 egg whites
- 100 g caster sugar
Beat the eggs with a whisk until snowy peaks form, then continue while adding in your sugar a spoonful at a time
- 1 tbsp unsweetened cocoa powder
- ⅓ tsp balsamic vinegar
- 16⅔ g dark chocolate, chopped
Add in the cocoa, vinegar, and chopped chocolate. Fold until thoroughly mixed.
Pour onto baking sheet to create a large, thick circle and smooth the shape
Place in oven and immediately reduce temperature to 140°C, then leave to cook for 1.10 - 1.30 hours.
When ready it will look crispy but you should feel slight chewiness if pressing down on the center. Turn off the oven and open oven door to let cool.
- 166⅔ g double cream
Meanwhile, whisk the cream until it is thick but airy and pile on top of the meringue.
- 66⅔ g raspberries
- 66⅔ g cherries
- 66⅔ g strawberries
Place the cherries, raspberries, and strawberries on top, decorating as desired.
- ⅔ tbsp grated dark chocolate
Sprinkle the grated chocolate over the berries for a final touch
