  • 1 chili pepper
  • 20 cilantro
  • 20 parsley
  • 1 lime
  • 1 tbsp ground black pepper
  • 1 tbsp salt
  • 1 tbsp sugar
  • 30 ml white wine vinegar
  • 200 ml olive oil
  • food processor
  • fine grater
  • cutting board
  • knife

Cut top off chili pepper, halve and remove seeds. Roughly chop cilantro and parsley and add to a food processor. Chop chili and add to food processor. Zest the lime and add to food processor. Add pepper, salt, sugar, white wine vinegar, and olive oil to the food processor.

Blend all the ingredients for approx. 30 seconds, or until well combined but not smooth. Use it as a sauce or a marinade for meat and seafood. Enjoy!
