Beetroot and Goat's Cheese Burgers
"A very taste take on the burger. You can replace the goats cheese with sheep’s cheese or even tofu if you prefer and choose toppings to your own tastes."
Difficulty
Easy 👌Ingredients
Utensils
box grater, bowl, frying pan
Step 1/7
- 1⅓ red beets
- ⅓ onion
- ⅔ cloves garlic
- box grater
Peel and grate the beetroot, onion and garlic on a box grater (or use a food processor with the grating blades attached).
Step 2/7
- 50 g rolled oats
- ⅔ tbsp olive oil
- ⅔ eggs
- bowl
Place the grated vegetables in a large mixing bowl. Add olive oil, eggs and rolled oats and mix everything well.
Step 3/7
- 66⅔ g goat cheese
- ⅓ basil (handful)
- salt
- pepper
Add the goat’s cheese, basil, salt and pepper and stir to combine.
Step 4/7
Set aside for about 30 minute, so the oats can soak up the liquid and the mixture sets. This step is important so the patties hold together.
Step 5/7
Try shaping a patty with your hands. If the mixture is still too loose, add some more oats. You should get between 6-8 patties from this mixture.
Step 6/7
- frying pan
Grill the beetroot burgers for a few minutes on each side, or fry them in a frying pan by heating a knob of coconut oil or ghee and fry until golden on both sides.
Step 7/7
- ⅓ lettuce (for serving)
- ⅓ mango (for serving)
- ⅓ avocado (for serving)
- ⅓ tomato (for serving)
- ⅓ onion (for serving)
Serve with grilled sourdough bread and toppings of your choice.
