Aubergine siracha bagel

- 1 aubergine
- 1 hallumi cheese
- 1 egg
Cut hallumi cheese in 7 pieces, fry until golden brown on both sides. Cut the aubergine in 1 cm rings, cover first in flour then in beaten egg and then in breadcrumbs. Fry for around 4 min on each side until golden brown.
Cut tomatoes, mix mayonnaise and siracha until combined. Then spread the sauce on both halfs of the bagel. Asamble the sandwich by putting aubergine pieces, halloumi slices, tomates and rocket. Cover with the bagel top and enjoy!
