Arugula salad with maledive fish and coconut (srilanka)
"This salad goes well as appetizer or side dish with any srilankan curry and rice. It’s also tasty on its own. The mix of smoky maledive fish, acidity of the lime, heat of the pepper/ onion and sweetness of the coconut creates an exciting blend that is nicely balanced by the bitterness of the arugula. You can also use portulak (gotukola) or parsley instead of arugula."

3 mortars and pestles, bowl
Step 1/5
- 1 tbsp maledive fish
- 1 tbsp black peppercorn
- mortar and pestle
Grind maledive fish flakes and pepper corns with mortar and pestle.
Step 2/5
- ½ onion
- ¼ tsp salt
- 1 tsp lime juice
- mortar and pestle
Add onion cubes, salt and lime juice to the mortar and continue grinding with the pestle.

- 2 tbsp unsweetened coconut flakes
- mortar and pestle
Add coconut flakes to the mix, grind and stir well. Set mixture aside.

- 1 package arugula
- 1 tomato
Wash arugula and tomato. Slice tomato into small cubes, cut arugula very finely.

- 1 tsp olive oil

Mix all ingredients in a salad bowl, add olive oil and stir well. Set aside to absorb the flavors for about 10min before serving.
