Peel apple and pear, cut of ends, and dice.
Add diced apple, pear, and sugar to a saucepan over medium heat. Add tarragon and salt. Deglaze with lemon juice. Bring to boil, stirring often. Allow to reduce, then remove tarragon. Transfer to canning jars. Enjoy warm or at room temperature with either savory or sweet dishes!
