Get your fresh loaves and old slices ready, because with these tips there will be no more dry bread! You can forget all about mould, and learn to refresh bread that’s already dried out. I&#x27;ve looked into the topic of storing bread for you and put together everything you need to know about storing and refreshing bread properly. There are a bunch of new tips I didn&#x27;t know before, and I&#x27;m amazed by how well they work.

Short & sweet–3 tips for storing bread properly

In a nutshell, the best way to store your bread is: - In a non-glazed clay pot. This allows the bread to breathe which prevents it from going mouldy. It also won’t lose too much moisture to the air, so it won’t dry out. - At about 20°C/68°F room temperature. If it is very hot in summer, bread moulds faster, and at refrigerator temperatures it loses moisture quickly and dries out. - With the cut edge facing down. This means that only the crust comes into contact with the air, which is good as this part doesn&#x27;t dry out as quickly as the soft inside.

White bread or a baguette may not be enjoyable after more than a day, but a wholemeal or rye loaf usually still looks fresh, even after 5 days. Of course, this usually depends on how the bread is stored, but here is a short list of how long the different types of bread keep before they dry out: — White bread 2-3 days — Mixed bread 3-4 days — Wholemeal 5-6 days — Rye bread 8-9 days If you bake your own bread, the shelf life will usually be a little shorter, as commercial stabilisers and other shelf life extending agents are missing. Mould only occurs when moisture builds up in the bread, like in a plastic bag. Then it usually only takes 2-4 days and the first mould spores are visible. If your bread becomes mouldy, it is better to throw it away, as the mould spores spread throughout the bread, so cutting off the affected area won’t do the trick.

Any container in which air cannot circulate is ruled out due to waterlogging and the risk of mould. Here is a short list of bread containers that you should never use. (1 is the worst, 4 the least bad) — Plastic bags (Bread accumulates moisture and moulds more quickly.) — Bread boxes or pots made of metal, plastic, glass, glazed ceramic or glazed clay without air holes (Bread accumulates moisture and moulds more quickly.) — Cloth bags (Bread releases moisture too quickly and dries out–remember, your bread is no pair of sport shoes.) — Paper bags or half-plastic-half-paper bags (Bread dries out quickly as the paper absorbs the moisture from the bread.) If you store your bread in one of these options, you&#x27;re better off switching to one of the following options. Here is a short list of bread containers that will keep your bread fresh for a long time and protect it from mould. (1 is the best, 4 is the least good) — Unglazed clay or ceramic pots (Air can circulate through natural material and the bread will not mould. The pot also does not absorb moisture from the bread and maintains the ideal temperature thanks to the solid walls, even on hot days.) — Wooden boxes (Same advantages as unglazed clay and ceramic pots, but wood does not keep the temperature as evenly and the air circulation is not quite as good. However, wood cleans itself and therefore needs to be cleaned less often.) — Bread boxes or pots made of metal, plastic, glass, glazed ceramic or glazed clay with air holes (Bread has limited air circulation and does not dry out as the environment does not absorb moisture.) — Left outside (Air circulates and the environment only absorbs moisture from the bread to a limited extent. Placed on the cut edge, it stays fresher for longer.)

Bread releases its moisture more quickly in cold temperatures, which is why it’s better not to store bread in the fridge. On the other hand, you can freeze bread without any problems if you pack it in an airtight container. This will prevent it from drying out in the freezer, so it will be like-new again when you defrost it (provided you bake it again briefly, more on this below).

Croissants, pain au chocolat, yeast plaits and other baked goods can be stored in the same way as bread, preferably in unglazed ceramic or clay pots. However, sweet pastries often contain a lot of sugar, which usually makes them last longer, and butter, which protects them from drying out. A simple paper bag is therefore often sufficient for storing sweet pastries.

If the loaf has dried out or could taste a little fresher, don&#x27;t worry, with these simple tricks you will be eating freshly baked bread again in no time: — To freshen up single dry slices of bread, moisten with water and toast them until they are no longer moist and slightly crispy. The same works with bread rolls. — To freshen up a whole, slightly dry bread loaf, wrap it in aluminium foil and bake in the oven at 180°C/360°F for 10 minutes, then leave to crisp for 2 minutes without the foil. — To freshen up a whole, really dry bread loaf wrap in a damp, wrung-out kitchen towel and bake at 180°C/360°F for 10-15 minutes and then leave to crisp for 2 minutes without the towel. How to store bread: Prevent it from moulding and drying out, and learn to freshen it up again

After “kitchen tamagotchi” sourdough and foamy-dreamy <a href="https://www.kitchenstories.com/en/recipes/internet-famous-frothy-dalgona-coffee-757a">dalgona coffee</a>, we are now onto the equally (or more) Instagrammable food trend: garden focaccia. You might have come across it in your Instagram feed during quarantine: a colorful decorated focaccia bread that resembles a garden. The trend is believed to have started <a href="https://www.nytimes.com/2020/04/24/dining/focaccia-bread.html" rel="nofollow">from a homebaker in the US</a> in early 2019, and enjoyed its fame during the spring. We may be a bit late <a href="https://www.nytimes.com/2020/04/24/dining/focaccia-bread.html" rel="nofollow">to the party</a>, but we believe summer is the best time to make it. From plump and stunning tomatoes to juicy melons, just look at all the colorful produce at the market!

While no one could really resist a fluffy, crispy, oily piece of focaccia bread, decorating focaccia elaborately can be something soothing and therapeutic, especially since most of us can’t physically be in Italy this year.

Similar to the art of <a href="https://www.kitchenstories.com/en/recipes/how-to-score-and-shape-bread-dough">scoring bread</a>, for me, decorating focaccia has some escapist, poetic depth to it. In the age of social-distancing, making garden focaccia can be a wonderful project for families with children and can be a great transportable finger food for a picnic by the lake.

To make it, we first need a focaccia dough. For a very basic but no less brilliant recipe, try this one by our chef Hanna. Follow until step 10, then roll up your sleeves to start your art creation.

Our chef Christian landscaped four different focaccia gardens and he absolutely had some fun with it. There’s no strict rule for what ingredients to use, so toss in whatever you have on hand—this is an especially good way to use up leftovers, like herbs, seeds, and vegetables. A good thing to keep in mind is how the finished product will look after baking. You want it to look like something you’d actually want to eat!

Here are some ideas for your imaginary garden: To make soil: nuts and seeds To make stems and leaves: herbs (scallions, chives), halved asparagus or thin carrots For shapes of flowers and fruit: red onions, olives, beetroots, bell pepper, sliced whole garlic, mini corn, or even edible flowers

Let your creativity flow and start with simple herbs to something even more elaborate. Recreate a famous painting like<a href="https://www.goodnet.org/articles/6-reasons-focaccia-never-looked-tasted-this-good-before" rel="nofollow"> Starry Night or The Scream.</a> Most of the decorated garden focaccia look prettier before baking, so take pictures here! Don’t forget a drizzle of olive oil to keep the dough moist and sprinkle on some sea salt for flavor. Send your artwork in the oven where they will be nicely browned and you will be awarded with an airy bite!

What’s the Deal With Garden Focaccia?

No bread, no life. Since we’ve been consuming bread for 4000 years, we now have a bewildering array of delicious breads with all different textures and shapes from all around the world. Sweet or savory, it always compliments other ingredients, as well as being a fantastic base for other dishes. But don’t forget, bread can be just as delicious on its own, and homemade bread tastes even better.

Fun bread facts and why you should make it at home

What does ancient bread look like? Is all bread baked? How would a bread expert call different bread parts when “analyzing” it? We did a bit of research to find out some fun bread facts:  Among all the existing types of breads, flatbread is the closest to its ancient form.  Bread can be made in a number of ways: in a pan(like <a href="https://www.kitchenstories.com/en/stories/the-17-sweet-and-savory-pancake-recipes-to-try-from-around-the-world">pancakes</a>), in a waffle iron(yes, waffles are also bread), and even in a steam basket (like all the <a href="https://www.kitchenstories.com/en/recipes/bok-choy-bao-buns">Asian steamed buns</a>).  An expert connoisseur of bread, like in <a href="https://www.youtube.com/watch?v=4g5k7H71G3k" rel="nofollow">this video</a>, would call the air holes in a bread “alveoli.” By looking at the “crumb structure” revealed by a sectional view, they can learn a ton about the bread’s hydration, baking method and whether it is industrially manufactured.

Since many of us are pretty satisfied with store-or-bakery-bought bread, why opt for homemade? No matter what role bread plays in your life—as a quick meal or a part of the shared food memories with friends and family—there are three obvious reasons for baking homemade bread: First, it is simply heartier and much more delicious than its mass-produced counterparts. All of us should relish at least once, a warm loaf of fresh-from-the-oven bread, just to know how good it tastes. Secondly, you want to avoid additives and preservatives. A healthy diet isn’t all about the calories: It also means consuming fresher food and taking in less chemicals that your body doesn’t need. And last but not least, it’s really easy to make bread at home! While it’s difficult to enhance or reduce the saltiness in savory recipes, you have more freedom with sweet bread, since the add-ins, toppings or glaze can all be easily swapped to tailor your taste. When sweetness meets the dough, a mismatch is really rare.

Good things always come in pairs. Fruit plus bread equals a win-win of contrasting textures on your palate. Even fruits we don’t particularly like might play a compliant supporting role when rendered soft or creamy in a leavened dough.
