Cook quinoa as directed (2 cups water to 1 part quinoa) on the stove.
Cut broccoli head into florets. Fill bottom of air fryer with 1/2 inch of water (below the basket). Place broccoli florets on top of basket. Insert into air fryer and cook at 380 degrees for 10 minutes. (Note: you can also cook broccoli however you like!)
When broccoli and quinoa is done cooking, toss both in a large bowl. Add hot sauce, pesto, parmesan to taste, and salt as needed. Optional: add zatar breadcrumbs and or cherry tomatoes for extra flavor and texture.
