Salad with Tomato , Mozzarella and Tortelloni
Step 1/ 4
- 160 g Mozzarella
- 6 tbsp olive oil
- 230 g cherry tomatoes
- 60 g mixed salad
Cut the tomatoes in half, cut the mozzarella into small pieces and mix with salad in a bowl. Then add approx. 1 tablespoon olive oil and mix.
Step 2/ 4
- 250 g Tortelloni Ricotta & Spinaci
- 4 tsp Pesto Basilico e Rucola / Arugula
- 30 g pine nuts
- 4 tsp tomato purée (passata)
Heat approx. 1 tablespoon olive oil, roast the pine nuts and add the tortelloni in a pan. Fry/heat briefly until the pine nuts get a roasting color. Then remove from the heat and add pesto and tomato paste and mix
Step 3/ 4
- 4 tbsp balsamic vinegar
- 2 tsp honey
- 1 tsp pepper
- ⅔ tsp Salt (if possible tomato salt)
- 1 tsp mustard
Prepare the dressing by mixing the honey, the remaining olive oil, balsamic vinegar as well as salt and pepper with a little mustard. Add as desired over the salad.
