Russian Kefir (buttermilk) Pancakes

- 175 ml kefir
Warm up kefir to 25-30C
- ¼ tsp baking soda
Add baking soda to kefir and mix well. Leave for 5-6 mins to rest.
- 1 eggs
- 1 tbsp sugar
- ¼ tsp salt
Add eggs, salt and sugar to the mix
- 115 g flour
Add flour through the sieve and mix well
- 175 ml water (hot)
Add boiling water to the mix
- 1½ tbsp vegetable oil
Add oil to the mix
- frying pan
Fry pancakes using mid-high level on hob right after all ingredients mixed. Use minimum amount of butter on the frying pen (using brush). Fry each side for about 1-2mins.

Smear melted butter on the top of each ready pancake
