“Traditional Russian pancakes. Looks very similar to French crepes. You can eat them plain, with berries, jams or with some savoury stuff like ham, smoked salmon or even salmon roe.”

Ingredients

Servings:-4+
350 ml kefir
350 ml water (hot)
eggs
2 tbsp sugar
½ tsp baking soda
½ tsp salt
250 g flour
3 tbsp vegetable oil
butter

Utensils

  • 5 whisks
  • sieve
  • frying pan
  • pastry brush
  • Step 1/8

    • 350 ml kefir

    Warm up kefir to 25-30C

  • Step 2/8

    • ½ tsp baking soda
    • whisk

    Add baking soda to kefir and mix well. Leave for 5-6 mins to rest.

    • eggs
    • 2 tbsp sugar
    • ½ tsp salt
    • whisk

    Add eggs, salt and sugar to the mix

  • Step 4/8

    • 250 g flour
    • sieve
    • whisk

    Add flour through the sieve and mix well

    • 350 ml water (hot)
    • whisk

    Add boiling water to the mix

  • Step 6/8

    • 3 tbsp vegetable oil
    • whisk

    Add oil to the mix

  • Step 7/8

    Fry pancakes using mid-high level on hob right after all ingredients mixed. Use minimum amount of butter on the frying pen (using brush). Fry each side for about 1-2mins.
