Whole New York strip roast, fat side up
tbsp
mustard (for marinating)
tbsp
honey (for marinating)
½ tsp
olive oil (for marinating)
cloves
garlic (grated, for marinating)
sprigs
rosemary
Salt to taste

  • Step 1/10

    *When you choose your roast - if the fat cap is too thick, ask the butcher to trim it. At the end of the day, it adds a ton of flavor!

  • Step 2/10

    Put the garlic, mustard, honey and olive oil in a bowl and mix until well combined

  • Step 3/10

    • tbsp mustard (for marinating)
    • tbsp honey (for marinating)
    • ½ tsp olive oil (for marinating)
    • cloves garlic (grated, for marinating)

    Pour the marinade mixture over the New York strip roast and rub all over the meat

    • Salt to taste
    • Black Pepper, to taste

    season the beef generously with salt and blackpepper. Avoid under-seasoning the beef because the last thing you want is an under-seasoned beef, let alone an under seasoned main course

    Chill the beef for at least 2 hours and up overnight

  • Step 6/10

    Get the beef out of the fridge and let it come up to room temprature for about an hour

  • Step 7/10

    Preheat the oven to 450 F°/230 C°

  • Step 8/10

    add the rosemary and put the beef in the oven for about 12-15 minutes to get a nice sear

  • Step 9/10

    Reduce the temperature to 375 F°/190 C° and cook for about 25-30 minutes or until the meat reaches an internal temperature of 130 Degrees Fahrenheit/55 degrees Celsius (for medium). The meat temperature will rise as it rests

  • Step 10/10

    Let rest for 10-12 minutes, carve and serve immediately
