Pumpkin roll (Cookie Zappa)

Jelly roll pan, stand mixer with paddle, oven, kitchen towel, Refrigerator
Step 1/8
- ¾ cup flour
- Jelly roll pan
Grease and flour a 15x10x1 jelly roll pan
Step 2/8
- 3 eggs
- 1 cup sugar
- ½ tsp cinnamon sugar
- 1 tsp baking soda
- 1 tsp vanilla extract
- ⅔ cup pumpkin purée
- stand mixer with paddle
Combine the cake ingredients with a mixer and pour into the pan.
Step 3/8
- oven
Bake at 375 for 12-15 minutes.
Step 4/8
- 1 cup Sugar, powdered
- kitchen towel
Turn cake onto a towel sprinkled liberally with powdered sugar.
Step 5/8
Roll up the towel/cake and allow to cool.
Step 6/8
- 8 oz cream cheese
- 1 tbsp butter
- ¼ tsp vanilla extract
When cool, unroll the towel/cake and spread the filling.
Step 7/8
- Refrigerator
Re-roll and chill.
Step 8/8
When serving, sprinkle with powdered sugar.
