Lemon and herb chicken flatbread
Ingredients

Step 1/6
- 2 chicken breasts
- 30 ml olive oil
- 30 ml lemon juice
- ½ lemon zest
- 1½ cloves garlic
- ½ tsp dried thyme
- 1 tsp rosemary
- ½ tsp dried oregano
- ½ tsp salt
- ½ tsp pepper

Dice the chicken and mix together with the marinade ingredients- leave this in the fridge for 30 minutes- 2 hours

- 150 g natural yogurt
- ½ tsp baking powder
- 150 g Self raising flour

Now for the flatbreads mix the baking powder and self raising flour then mix in the yoghurt
Step 3/6
Knead until a rough ball forms. Tip onto a lightly floured surface and spilt into 4 balls
Step 4/6
Roll out the dough and cook in a non stick frying pan for 2-3 minutes a side or until slightly browned
Step 5/6
Once the chicken is marinated cook in a griddle pan until white through and slightly charred
Step 6/6
Serve with salad and your favourite sauces
