Beets are spectacular in a variety of dishes; they add earthy yet subtly sweet flavor, vibrant color, and wonderful texture. But we far too often avoid buying them raw because we're not sure how to prepare them ourselves. For all the reasons above, it's worthwhile to start making them at home. Plus, your oven does most of the work. And if you're worried about staining your hands in the process, wear a pair of gloves when it comes time to peel them.
