Ingredients

½ onion
potato
carrot
300 g broccoli
1 tbsp olive oil
1 l beef stock
100 ml double cream
salt
pepper

  • Step 1/4

    • ½ onion
    • potato
    • carrot
    • 300 g broccoli

    Peel and chop potato, carrot and onion, cut broccoli into smaller pieces.

  • Step 2/4

    • 1 tbsp olive oil
    • 1 l beef stock

    Roast the vegetables on olive oil for 2 minutes on medium heat then add the beef stock and let it cook till soft.

  • Step 3/4

    • 100 ml double cream

    Blend the soup with stick blender until it's creamy, then add cream and blend again.

  • Step 4/4

    • salt
    • pepper

    Add pepper and salt if needed.
