small oranges, rind removed and sliced into half-moons

    • 1 tbsp orange juice
    • 1 tbsp lemon juice
    • ⅓ tsp honey
    • salt and pepper
    • 1 tbsp olive oil

    In bowl, whisk together orange juice, lemon juice, honey and salt and pepper (to taste) to dissolve honey, then whisk in oil.

    • 1⅓ mixed color carrots, shaved lenghtwise
    • 1⅓ radish, shaved into rounds
    • ⅔ stalks celery, thinly sliced
    • ⅓ small beet, shaved into half-moon rounds
    • ⅓ cup watercress
    • ⅔ small oranges, rind removed and sliced into half-moons
    • ⅛ cup fresh mint leaves
    • platter

    Arrange vegetables, oranges, and mink onto a large platter and drizzle with the vinaigrette.
