Ingredients

bananas
½ butternut squash
300 g flour
200 g caster sugar
1 tsp baking powder
1 tsp ground nutmeg
1 tsp ground cinnamon
1 g ground ginger
eggs
100 ml oil

  • Step 1/8

    • bananas

    boil butternut squash until soft

  • Step 2/8

    • ½ butternut squash

    chop and mash bananas

  • Step 3/8

    • 300 g flour
    • 200 g caster sugar
    • 1 tsp baking powder
    • 1 tsp ground nutmeg
    • 1 tsp ground cinnamon
    • 1 g ground ginger

    mix dry ingredients in large bowl

  • Step 4/8

    • eggs
    • 100 ml oil

    beat eggs and mix with oil

  • Step 5/8

    mix all ingredients including dry mixture, banana, squash, eggs and oil

  • Step 6/8

    pour into loaf tin lined with greaseproof paper

  • Step 7/8

    bake in oven for 1 hour at 180°c

  • Step 8/8

    leave to cool for half an hour
