Ingredients

diced onion
tsp
olive oil
diced bell pepper
jalapeño diced

salsa verde
tbsp
tomato paste

canned black bean (drained + rinsed)
5 oz
canned pinto bean (drained + rinsed)
cup
corn
¼ cup
dried red lentil
tsp
chili powder
tsp
garlic powder
tsp
cayenne pepper
  • Step 1/6

    Chop veggies, drain and rinse beans, and measure ingredients

  • Step 2/6

    • diced onion
    • tsp olive oil

    Bring large pot to medium heat and add oil. Add onions and sauté until edges are golden

  • Step 3/6

    • diced bell pepper
    • jalapeño diced
    • cup corn

    Add jalapeño, bell pepper, and corn and cook until peppers are tender, about 5 min

  • Step 4/6

    • cups vegetable broth
    • 5 oz canned crushed tomatoes
    • cup salsa verde
    • tbsp tomato paste
    • 5 oz canned black bean (drained + rinsed)
    • 5 oz canned pinto bean (drained + rinsed)
    • tsp chili powder
    • tsp garlic powder
    • tsp ground cumin
    • tsp cayenne pepper

    Add veggie broth, crushed tomatoes, tomato paste, salsa, beans, and spices. Stir and let come to a boil

  • Step 5/6

    • ¼ cup dried red lentil

    Once boiling, add lentils. Then reduce heat to medium-low, cover, and let simmer for 25-30 minutes

  • Step 6/6

    Optional: add sour cream or greek yogurt, shredded cheese, or other toppings once cooking is done!
