Vegetarian Lentil Tortilla Soup
Ingredients
Step 1/6
Chop veggies, drain and rinse beans, and measure ingredients
Step 2/6
- ⅓ diced onion
- ⅓ tsp olive oil
Bring large pot to medium heat and add oil. Add onions and sauté until edges are golden
Step 3/6
- ⅓ diced bell pepper
- ⅓ jalapeño diced
- ⅓ cup corn
Add jalapeño, bell pepper, and corn and cook until peppers are tender, about 5 min
Step 4/6
- ⅞ cups vegetable broth
- 5 oz canned crushed tomatoes
- ⅛ cup salsa verde
- ⅓ tbsp tomato paste
- 5 oz canned black bean (drained + rinsed)
- 5 oz canned pinto bean (drained + rinsed)
- ⅛ tsp chili powder
- ⅛ tsp garlic powder
- ⅛ tsp ground cumin
- ⅛ tsp cayenne pepper
Add veggie broth, crushed tomatoes, tomato paste, salsa, beans, and spices. Stir and let come to a boil
Step 5/6
- ¼ cup dried red lentil
Once boiling, add lentils. Then reduce heat to medium-low, cover, and let simmer for 25-30 minutes
Step 6/6
Optional: add sour cream or greek yogurt, shredded cheese, or other toppings once cooking is done!
