Ultimate vegan grilled cheese

- 4 slices bread
- 3 tbsp plant-based butter
- 4 tbsp ketchup (optional)
Spread vegan butter on one side of each piece of bread. Add any optional ketchup or marinara sauce to the unbuttered side of one slice.

- 2 tbsp starch
- 2 tbsp nutritional yeast
- 60 g tapioca starch
- 2 pinch salt
- ½ tsp garlic powder
- 2 pinch ground turmeric
- 250 ml unsweetened plant-based milk

In a small saucepan combine the cornstarch, nutritional yeast, tapioca starch, salt, garlic powder, and turmeric. Next, add the milk, mixing thoroughly with a whisk as you pour.

- 4 tsp white wine vinegar
- 50 plant-based cheese (grated)

Place the saucepan on medium-high and, once up to temperature, add the butter, white wine vinegar, and optional vegan cheese. Using a wooden spoon, mix well. Let cook for about 2 min., stirring throughout, until a thick, stretchy mass of cheese forms.

Transfer this mix to the unbuttered side of one slice of bread. Top with the second piece of bread, buttered side facing outward.

Heat a medium skillet on medium. Once hot, add the sandwich. Grill for 2 – 3 min. on each side, pressing it down a little with a spatula as it cooks.
