„Wild Garlic“ Gnocchi
Cook the potatoes about 25minutes until soft. During this time you can braise the onions together with the Wild Garlic in a pan with butter.
Then you can mash the Wild Garlic and the onion with the 2 eggs and mix together with the flour, semolina and the peeled, mashed potatoes.
You can then shape the dough into small globes on a generously floured work surface. you can either leave them like this or you can give them their typical shape with a fork.
You can then boil them in salted boiling water for about four minutes. afterwards you can serve them with Wild Garlic butter and Parmesan. Enjoy!
