Ingredients

Servings:-4+
Aubergine
125 ml soy sauce
1 tbsp Rice wine vinegar
2 tbsp brown sugar
Ginger grated 1 inch
3 cloves garlic crushed
60 ml Mirin sweet Japanese wine
  • Step 1/4

    Mix all the ingredients (except aubergines) together in a bag.

  • Step 2/4

    Chop aubergine into small cubes and add to bag. Marinade in fridge for 30 minutes

  • Step 3/4

    During marinade prepare some sticky rice or noodles.

  • Step 4/4

    Heat up frying pan/wok and add aubergines to pan and cook (or bake in oven) for a short time until beginning to brown. Serve hot.
