Ingredients

500 g pasta dough
250 g ricotta cheese
100 g Parmesan cheese
50 ml lemon juice
2 tsp lemon zest
salt
pepper
  • Step 1/5

    • 500 g pasta dough

    Take the dough out of the fridge and start to roll it out very thinly with a rolling pin or with a pasta machine.

    • 250 g ricotta cheese
    • 100 g Parmesan cheese
    • 50 ml lemon juice
    • 2 tsp lemon zest
    • salt
    • pepper

    Now you can mix all the other ingredients into a smooth paste and add salt and pepper to taste.

    Then you can use 2 small spoons to put small piles on one half of the dough. With moistened fingers you can moisten around the filling and then carefully place the other half of the dough on the piles

    With a pizza roller or a knife you can then cut out squares with the filling in the middle to finish your raviolis.

    Now you can cook your finished raviolis for about 3 minutes in boiling salted water and serve it with a sauce of your choice! (taste best fried in a little salted butter with some lemon zest and pepper)
