In a medium bowl, mix wet ingredients. In a separate, smaller bowl, mix dry. Slowly add dry to wet. Combine well, but don’t overmix.￼
Cook in pan over low-medium heat. Drizzle a little vegetable oil in the pan. Using a 1/4 measuring cup,￼ pour batter into the pan, gently shaking the pan to spread it out.
Once bubbles start to form and pop in the center, flip pancake over and cook for equal amount of time. Transfer to serving plate.
