|3 tbsp||canola oil|
|¼ cup||distilled white vinegar|
|¼ cup||soy sauce|
|1 tsp||black peppercorn|
|3 leaves||bay leaves|
|jasmine rice (for serving)|
Crush garlic using a mortar & pestle or a knife.
Grind black peppercorns. Alternatively, you can also use ground black pepper.
Combine water, soy sauce, vinegar, chicken, garlic, black pepper and bay leaves in a pot. Boil in medium heat for 6-8 minutes and then set aside.
Heat oil in a frying pan. Transfer chicken and some of the garlic bits from the pot to pan. Fry each side for 2 min or until brown.
Put the chicken, garlic and oil back in the pot with the liquid mixture. Let simmer for approx. 30 minutes.
Enjoy with rice!
