“Chicken adobo (“adobong manok” in Tagalog) is a classic Filipino dish. It’s not officially the national dish of the Philippines, but it might as well be! This dish is made in different ways & comes in many variations. Many Filipinos would argue that their mom or grandma (“lola”) makes the best adobo. I’m sharing my lola’s recipe exactly how she makes it: using a mortar & pestle with only a handful of ingredients. Tangy, simple & tasty! Tip: if possible, use cane vinegar instead of white vinegar.”

¼ cup distilled white vinegar
¼ cup soy sauce
1 tsp black peppercorn
1¼ cups water
5 cloves garlic
3 leaves bay leaves

    Grind black peppercorns. Alternatively, you can also use ground black pepper.

    • 1¼ cups water

    Combine water, soy sauce, vinegar, chicken, garlic, black pepper and bay leaves in a pot. Boil in medium heat for 6-8 minutes and then set aside.

    Heat oil in a frying pan. Transfer chicken and some of the garlic bits from the pot to pan. Fry each side for 2 min or until brown.

    Put the chicken, garlic and oil back in the pot with the liquid mixture. Let simmer for approx. 30 minutes.
