For the honey simple syrup, combine 4 tbsp honey and 60ml water in a small saucepan. Cook over medium heat for a minute, stirring frequently. Remove from heat and let cool to room temperature.
Put Cointreau, lemon juice and 4 tbsp of the made honey simple syrup in a cocktail shaker with some ice cubes. Shake vigorously for a couple of seconds.
Strain into two small glasses over ice. Garnish with fresh sprigs of rosemary if you like and serve.
