Remove florets from cauliflower head and roughly chop. Add butter to a pot over medium heat, add cauliflower, and sauté. Season with salt and pepper, and add coriander seeds and nutmeg. Cook for approx. 5 min. more.
Deglaze with cream and cook for 5 – 10 min. more. Purée with an immersion blender, garnish with parsley, and enjoy!
