100 g Gravlax-style sea salad from Nordic Oceanfruit
sweet potato (approx 300 g)
15 g dill (finely chopped)
15 g chives (finely chopped)
2 tbsp olive oil
3 tbsp soy yogurt
½ cucumber

    Bring a large saucepan of salted water to the boil.

    • sweet potato (approx 300 g)

    Meanwhile, peel and dice the sweet potato before boiling the cubes in the water until soft (use a fork to test the consistency).

    • 15 g dill (finely chopped)
    • 15 g chives (finely chopped)
    • 2 tbsp olive oil

    Drain off the water then mash the potatoes with the olive oil and herbs. Season to taste.

    • 3 tbsp soy yogurt
    • ½ cucumber

    Slice the cucumber finely and mix with the Gravlax style sea salad from Nordic Oceanfruit. Then, season the soy yoghurt.

    Spoon the mashed sweet potatoes on a plate then dollop or spread the yoghurt on top. On top of that goes the gravlax/cucumber salad mix. Finally, garnish with dill and tuck in!
