Begin with the dry mix: combine rice flour, salt, baking powder, and xanthan gum and set aside.
In an electric mixer beat eggs and sugar until the mix has doubled in size and is very frothy, add vanilla extract and milk and blend for a few seconds.
Slowly start adding the dry mix to the wet mix blending all ingredients thoroughly
When all ingredients are well blended, gently fold in the blueberries using a spatula
Transfer the batter/mix to a 8” or 9” pan. I have a round pan, any shape will work. (I also sprinkle a little granulated sugar on top)
Preheat oven to 350 degrees and bake for 35-40 minutes or until done, insert a toothpick and see if it comes out clean, if it is coated with the sticky batter then bake for additional 10-15 minutes
Wait is over, blueberry loaf is done , slice a big piece and serve with tea or coffee. Eating is the best part :-)
