season the chicken with the salt and pepper
heat the oil in a skillet over medium-low heat
place the chicken in the skillet and cook until skin is crispy, ensure it is cooked evenly. once cooked, remove from the skillet
add the garlic and onion into the same pan and cook until onion is translucent
stir the tomatoes and spinach into the onion and garlic, cook until spinach is wilted
add heavy cream, salt and pepper and bring to a boil
add the parmesan cheese and parsley, stirring until the sauce has thickened slightly
turn off the heat and place the chicken back in the pan, spooning the sauce on top of the chicken
