Ingredients

100 g
red lentils
¼
onion
27½ g
bulgur
¾ cloves
garlic
¼ tbsp
tomato purée (passata)
½ tbsp
lemon juice
salt
pepper
¾ tbsp
butter
½ tbsp
dried mint
475 ml
water

    Finely chop the onion

  • Step 2/12

    Mince the garlic

  • Step 3/12

    Juice 1 lemon

  • Step 4/12

    • 100 g red lentils
    • ¼ onion
    • 475 ml water

    Place the lentils, onion and water in a large pot and bring to the boil

  • Step 5/12

    Reduce the heat and skim off any scum or foam with a slotted spoon

  • Step 6/12

    • 27½ g bulgur

    Add the bulgur, partially cover and cook until done according to the packet instructions

  • Step 7/12

    • ¾ cloves garlic
    • ¼ tbsp tomato purée (passata)

    Add the garlic and tomato purée, mixing well

  • Step 8/12

    • ½ tbsp lemon juice
    • salt
    • pepper

    Add the lemon juice, salt and pepper to taste

  • Step 9/12

    Place soup in a large serving bowl

  • Step 10/12

    • ¾ tbsp butter

    In a small skillet, melt the butter until it sizzles

  • Step 11/12

    • ½ tbsp dried mint

    Remove from the heat and stir in the mint

  • Step 12/12

    Pour over the soup and serve
