Easy Corn Fritters
- ⅛ cup flour
- ⅛ tsp baking powder
- ⅛ tsp salt
Sift the flour, baking powder and salt together into a mixing bowl.
- ¼ eggs, beaten
- ¼ cups cream style corn
Add the beaten eggs and cream style corn and mix well.
- ¼ cups whole kernel corn
Fold in the drained whole kernel corn
Heat 1-2 tablespoons of oil in a non stick frying pan over medium heat. Place spoonfuls of the corn mixture into the pan and cook for 3-4 minutes until bubbles appear on the surface of the batter. Turn and cook the other side for a further 3-4 minutes. Or until the fritters are golden.
Serve! I usually serve mine with sour cream and sweet chilli sauce. It’s also yum with bacon!
