2 ovens, loaf tin, stand mixer with whisk, whisk, wooden spoon, 2 sieves, bowl, skewer, wire rack, teaspoon, metal spoon

    Heat Oven to 180C/160C fan/ gas 4.

    Butter a Bread Loaf Tin all the way around.

    • 23⅓ g self-raising flour
    • tsp baking powder
    • tsp ground cinnamon
    • 20⅞ g sultanas
    • tsp vanilla extract
    • bananas (very ripe)
    • stand mixer with whisk
    • whisk
    • wooden spoon
    • sieve
    • bowl

    Cream the butter and sugar until light and fluffy, then slowly add the eggs with a little flour. Fold in the remaining flour, baking powder, bananas, cinnamon, raisins and vanilla essence.

    Pour into the tin and bake for about 30 mins (I recommend 45 - 50 minutes) until a skewer comes out clean. Cool in the tin for 10 mins, then remove to a wire rack.

    • tsp lemon juice
    • tsp water
    • sieve
    • teaspoon
    • metal spoon

    (Optional) Mix the icing sugar with 1 tsp of water and 2 tsp of lemon juice to make a runny icing. Drizzle the icing across the top of the cake and enjoy!
