Ingredients

400 g White flour
200 g butter (room temperature)
1 pinch salt
1 tsp baking soda
1 g vanilla sugar
100 g Icing sugar
eggs (room temperature)
1 kg apple
1 tbsp lemon juice (for marinating)
100 g sugar (for marinating)
1 tsp Cinnamon
egg yolks (for coating)
10 g Icing sugar

    • 400 g White flour
    • 200 g butter (room temperature)
    • 1 pinch salt
    • 100 g Icing sugar
    • eggs (room temperature)
    • 1 tsp baking soda
    • 1 g vanilla sugar

    In a separate bowl, mix together the flour, butter, salt. When the mixture is fully homogenised you can add the baking soda, icing sugar, vanilla sugar and the eggs. Finish by hand and shape into a ball. Flatten the dough a little bit and wrap into cling film. Let it chill in the refrigerator for 20-30 minutes.

    • 1 tbsp lemon juice (for marinating)
    • 100 g sugar (for marinating)
    • 1 tsp Cinnamon

    In a large mixing bowl, combine the sliced apples with the lemon juice. In a smaller bowl, combine together the sugar and cinnamon. Sprinkle the mixture over the apples and stir to coat them. Let them sit, meanwhile preheat the oven to 375°F (190°C) and lightly grease your tart pan with cold butter.

    Once the dough is chilled divide it into 2 pieces, one about twice as large as the other. The larger piece will be the bottom crust, the smaller one the top crust. Roll the larger piece of dough into a circle and transfer it into the prepared pan. Trim the edges so that they overlap the rim of the pan all the way around. Spoon the apple filling into the pan.

    Roll out the remaining dough into a circle and slice it into thin layers. Weave a lattice crust for the top layer. Whisk the eggs and brush them on the top crust. Bake the pie for about 45 minutes. Remember to check the pie every 10 minutes. When ready sprinkle some icing sugar on top.
