"Lemon curd is one of my favorite sweet treats, whether swirled into strawberry ice cream, layered between stacks of fluffy white cake, or spooned on top of a little nest of meringue. This super easy lemon pudding has all the notes of what might happen if a lemon curd met up with a creamy custard. It sets thick like a panna cotta and somehow offers that same air of refinement. Enjoy with fresh berries of your choice."

    Zest lemon and add to a small bowl. Juice zested lemon into another small bowl.

    Add heavy cream and sugar to a saucepan with lemon zest. Season with a pinch of salt and bring to a simmer over medium-high heat, whisking often. Once sugar has dissolved and mixture thickens slightly, approx. 5 min., remove from heat. Add reserved lemon juice and mix to combine. Let cool until a skin forms on top of the mixture.
